My kids like spaghetti squash (pareve with olive oil and salt or dairy with parmesan cheese). You can also make kugels with matza if you eat gebrochts. We make one that's like stuffing with mushrooms and onions.

Rice (plain, fried, brown, turmeric, Mexican, there are so many ways to prep)
String beans
Sugar snap peas
Frozen mixed veggies
Corn on the cob or from a can
Asparagus
Couscous/ ferfel / orzo
Popcorn or Breaded cauliflower
Roasted broccoli
Tomato salad
Veggie latkes

For pesach. Some are kitnyos. Some are Starchy chometz you mentioned unless it's GF.

I do blintzes out of egg crepes- filled with liver, sautéed veggies, mushrooms
Spaghetti squash kugel
Zucchini in tomato sauce
Carrot pineapple slaw

Cucumber salad
Cole slaw made from kohlrabi if you only do peeled veg
Mock cabbage noodles-Shredded lukshen crepes with sautéed onion and kohlrabi.
