Self catering bar mitzva breakfast- can you help?

Very limited budget.
What is worth doing myself vs what is best to buy?
What food items are necessary or nice?
What desserts are easy to make or buy?

Where do I start?
Please share tips and advice!

Are you making Milky?

I would set up a gorgeous buffet with some of the following:

Assorted bagels, breads and baguettes
cream cheese
egg salad
tuna salad
lox
avocado
butter
eggplant dip
other dips
Shakshuka warmed
Juices
salad
cut veg
quiche
yogurt with granola
Baked Ziti
Hasselback butter potatoes

For dessert, I would do another smaller table with assorted muffins such as cappuccino, chocolate and cheese, carrot, vanilla and cherry and perhaps hot coffee and cocoa and blintzes, fruit or whatever else sweet.

On a budget, make your own tuna egg salad and muffins and ice coffee.

I would only buy the breads and juices.

I would make everything else the day before.

The muffins I would freeze in advance.

The salads I would prepare individual componants the night before and combine it nicely right before. The dressing I would also make the night before or even 2.

Is it a true breakfast? Or more like brunch?

Bagels are cheap and yummy. I do enjoy baking my own bread, so if it was my event, I'd make homemade.

Eggsalad, tuna, avacado spread are all much cheaper to make homemade. So is iced coffee.

For hot dishes I would probably serve waffles or pancakes, scalloped potatoes, eggs, mini quiches. Quiches can be made in advance and frozen, the rest needs to made day before. If it's brunch, I'd probably also serve a pasta dish, maybe instead of the potatoes.

Muffins, cheesecakes would be my desserts, along with a big assortment of yummy dairy chocolates and a coffee/ cocoa/ tea station.

I would serve only one hot dish if you're no so keen on it.

A crustless quiche takes minutes to make and can be frozen!

Just some options, I would choose 2:
A lettuce salad with roasted sweet potatoes and some seeds.
A cabbage salad with a delicious creamy dressing.
Israeli salad.
Broccoli salad is more pricey.
Leek and tomatoe salad.

You can also serve a onion, veg, barley or mushroom soup which is hot and yummy.
