Is there a list of kitniyot somewhere? I’m so confused as what is considered kitniyot. It’s my first year making pesach.

There might be other opinions on a few things, but this is a reliable list to start with. Of course, any specific questions you should ask your Rav.
Liquids that are extracted from kitniyot (like sesame oil) have a slightly different halachic status, but are generally not used.

peanuts btw are listed as kitniyot , (I didn't know till I was wondering why I can't find peanut butter for matzah in the stores) , quinoa I am not sure about.

The things that tend to be forgotten as kitniyot are corn, string beans, green beans, sugar snaps, mangetout… the things that we see as ‘veg’ in the supermarket.

As far as I understand it, quinoa is not classified as kitniyot, because it wasn't known when the takanah about not eating kitniyot was made, but it's qualities fit the general character of kitniyot.
Some people hold that it wasn't classified as kitniyot, so they will eat it.
Others hold that it only escaped being kitniyot because it wasn't known, but it resembles kitniyot in most ways, so they don't use it.
As always - ask your Rav.
(There is one opinion that holds that potatoes should be kitniyot, because we can produce a form of flour from them, but I've never heard of anyone following that opinion!)

"If yeast doesn't contain any ingredients from the 5 grains (as it often doesn't) it isn't chametz even though it has the same characteristics as se'or (see Mechiltah 9:19 on Sh'mos 12:19) and one may own it on Pesach." Check the ingredients on yours.
Plain flour isn't chometz gamur either, since it hasn't gotten wet yet.

In Israel quinoa is considered kitniyot. It's not possible to find it with an ashkanzi hescher for Pesach.

To my knowledge Rav Moshe held that peanuts aren't kitniyot.

Se'ohr is sourdough starter. It's a form of yeast, but not all yeasts are se'ohr.

There are different opinions in plain flour nowadays as it may come into contact with water during processing.

Yeast is not chometz, but there is no kosher lpesach yeast. So you can put it with your sold/taped up food.
