Batyaskitchen Potato Kugel was heaven.
Which recipe do I try to get that taste and texture?

I do equal part potatoes and eggs salt and pepper. I bake 1hr30min on 400. I had once with ferfel sprinkled with white pepper and salt, delish.
Try it. It might make a couple tries to get it just right.

It stayed so white over Y"T and stayed good tasting too.
I wonder what they do differently.
It tasted similar to "Guttmans" (used to be in BP) Potato Kugel.

I find that staying white has to do with the type of potatoes you use
I like yellow potatoes
I also find the Idaho potatoes too starchy

Vitamin C powder is the secret to a white potato kugel. It is sold in pharmacies and health food stores

It is also sold in supermarkets and called sour salt. It's citric acid. Don't use more than a scant 1/4 tsp or else your kugel will taste like lemon.

Vitamin C is ascorbic acid, not critic acid.

Sour salt is citric acid; vitamin C is ascorbic acid. Both antioxidants, which is how they keep the spuds white, but two different chemicals, though both associated with citrus fruits.

Preheat your oil
Sprinkle sugar across top to get gorgeous crust
1 egg to every two potatoes
1 onion to every three potatoes

Can someone pls clarify , real Vitamin C… so if I have in tablets , I can crush into powder ??
How much of it ?
For years & years I used to make “ the perfect golden yellow “ potato kugel
Than most places stopped selling real Yukon potatoes
And my most perfect recipe isn’t perfect any longer
My potato kugel started looking like trash lol
Desperate for normal looking kugel, will try the tips from here

I have used Vitamin C and it does help with color, but the Batyaskitchen potato kugel's texture is amazing. I can tell they used a string grater, for at least some of the potatos for the kugel, bec you can still see the strings of potato. Im wondering if they use some kind of binder like Matza Meal or something.

She's non-gebrokts for pesach. Who needs binder for potato kugel? It's so starchy on it's own and gives the most creamy slightly gooey texture.
