Hi
Looking for a delicious pot roast recipe for #4 meat /shoulder roast/silver tip roast that doesn't include wine or broth (don't like the taste of wine in pot roast and don't have stock.

Susie Fishbein has a recipe I've used in one of the KBD books. Saute onions, brown the roast, sprinkle with onion soup mix, and put water 1/2 way up the sides of the roast. Simmer for about 3 hours till soft. The last hour, add in any vegetables you like, like potatoes, carrots, sweet potato, parsnip, celery, etc....to serve alongside the roast.

zaq- what do those substitutes do? soften the meat/add flavor/both?
Chayalle, thing is I don't use soup mix either...wondering how I can get great flavor without broth/soup mix/wine...

You can make a paste of crushed garlic, kosher salt and olive oil and rub all around roast. Be generous. Marinate as long as you have.
Sauté onions. Add marinated roast. Proceed with chayalle recipe.
(If it's really a Silvertip it's better rare than as a pot roast.)
