I want to make a tuna casserole with egg noodles. The recipes I found use cream of mushroom soup and peas. I don't have cream of mushroom soup and my kids won't touch peas. Is there something I can sub so it will still be tasty?

You can leave out the peas easily.
The cream of mushroom soup adds to the taste and texture, I think you'd need to sub another "cream of" soup.

My mother's recipe used a cream of mushroom soup, and I have trouble finding it in the stores these days.

I've substituted with mushrooms (fresh sliced or canned) and also onion soup mix and milk, and the results taste just about the same.

You can try mayo, milk, and soup mix or spices instead of the condensed soup. And don’t skimp on the cheese!
Do your kids eat chopped broccoli?

Be careful, some Walmart cream of mushroom soup is imported from Canada with no hechsher and looks identical to their American produced with an OU-D

Make your own base. Saute mushrooms, make a roux, add seasonings, vegan broth amd milk until thickened.

Here's another version as well.

1 tablespoon butter
8 ounces white button mushrooms sliced
3/4 vegan chicken broth
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1/2 cup milk
1/4 cup flour
Salt and black pepper

In a large saucepan over medium-high heat, melt butter until foaming. Add mushrooms and cook until they have released most of their liquid, about 5 to 7 minutes.
Stir in broth, onion powder, and garlic powder and bring to a simmer. In a small bowl, whisk together milk and flour.
Stir in milk mixture and cook until soup has thickened, about 1 minute. Season to taste with salt and pepper.

Makes 2 cups condensed soup.
[Add 2 cups water if using the base for an actual soup (and not for a casserole).]
