I've made kishka in the past, but currently don't have a working food processor.
I'm wondering if I cook carrots/onion/celery until soft, drain and mash, then mix in other ingredients, would it come out okay?

You don't have it to make it from vegetables.
Kishke
1 1/2 cup flour
1/2 cup oil (can use a little less)
1/4 cup sugar
1 Tbsp paprika
1/2 tsp garlic powder
1 tsp salt
1/4 tsp black pepper
3/4 cup boiling water
Mix & add a few slices of chopped pastrami. It will be thin. Spoon onto middle of a large piece of silver foil and roll into a thickish log, twisting the corners gently like a candy wrapper to seal tightly.
