Veggie Kugel

Looking for a vegetable kugel for sukkos that

1. Is low carb (so not potato or sweet potato.)

2. Tastes good even if it isn't piping hot.

3. Cuts nicely.

4. No artificial ingredients or sugar.

zucchini kugel? Onion kugel? Mushroom kugel?
I would do them as individual muffins to save on trying to cut kugel neatly. Or apparently if you cut kugel when it's cold, it cuts neatly, then you put it back in the container and heat it up.
Try kosher.com, it's got a lot of great recipes.

Why kugel? Roasted veggies at room temp are much more tasty.

I had forgotten until you said it that for pesach I make my cauliflower kugel in muffin pans. More crust! (We like the crust best.) No mess! Thank you for reminding me!!

Butternut squash and zucchini.
Cook butternut squash and Zucchini, strain in stainer, let it sit for 10 minutes to drain as much liquid as possible. Add sauted onions and mushrooms, a little mayo, matzo meal, salt and pepper. Good in a pie shell or not. Bake
Yum!!
