I mix the sour cream with some confectioners sugar. When the cheesecake is done baking, while piping hot out of the oven, I spread out the sour cream mixture on top of the cake and let it sit until it’s all cooled.

can I mix with maple syrup? or has to be confection?
any quantity measurements?

Never tried maple. It might change the texture.
I use the small container sour cream and no amount for the sugar. I mix And taste 😸

why do you spread it when the cake is piping hot?
mine is a no bake cheesecake - will it set?

You have to wait until next day when it's set before adding topping.

Hers sets in the oven while it bakes.
You can definitely try to cream a cream before it sets. I'm sure it will shmush great.

Sorry I didn’t realize you mean a no bake cheesecake. I’m not sure if this will work on a cheesecake that doesn’t get baked and set in the oven

I do sour cream and regular sugar with some vanilla sugar.
Sorry I don't know amount. I add in sugar and mix. The sour cream starts becoming more runny. I taste and add accordingly. When it's sweet enough and the right consistency I put it over cooled cake.
