Which beef roast should I buy, to cook in slow cooker, that yields a sliceable and very soft meat?
Not pickled, not pastrami. Only natural meats.

I don’t care for minute roast; we like chuck roast. Always slice cold for the nicest slices

Chuck is a tougher meat. You have to cook it low and slow for a long time. For best results cook it with a sauce.

How do 1st cut Brisket and 2nd cut Brisket compare to above, and can it be cooked in a slow cooker?

Pastrami roast comes out very good. We actually potatoes and rice (like Cholent without meat) at the bottom and then the pastrami roast in too
