I like to swirl it into a boxed brownie mix and sprinkle lotus cookie crumbs on top.

I just made this, and it took me less than 15 minutes.
8 ounce of whipped topping
1 1/2 ounce of vanilla pudding
2 1/2 tablespoons lotus butter
30 lotus cookies.
Beat the whipped topping until soft peaks form, add the vanilla pudding and beat until stiff peaks form. Melt the lotus butter, and add.
Pipe the mixture on 15 lotus cookies and cover with another lotus cookie. Freeze.
It came out so amazing. It was so easy to make, I will be serving it with a warm drink IYH
Ps I would half the mixture. I got way too much.

Naomi Nachman has a great recipe on kosher.com for lotus cookie bars.
I don’t even put the cookies on top- just use the lotus butter.

In the notes it says you can add peanut butter etc.
I make it with Lotus butter and it's delicious!!
Another recipe is homemade ice-cream lotus flavoured by adding lotus butter instead of the vanilla/flavouring.
This is what my in-laws all ask me too make when we come.
