Yes. I mean it’s fine halachially if it doesn’t have sugar and oil ( and many sfardim prefer that halachially) but it won’t be challah

You could use any bread recipe. Americans tend to make it richer, with more sugar and eggs.
I prefer without eggs.
Mist doughs could be braided.

Nothing, I just prefer the flavor without eggs.
Also, some people are allergic to eggs.
