Hi Cakes,

Craving a good, rich fluffy chocolate cake.

I don't have my cookbooks on me now, but if someone could take the time and share theirs with me.

It would be greatly appreciate.

Easy one. No fail preferred.

Thanks

Are you willing to settle for reasonably rich, not sinfully rich, denser texture rather than fluffy, one-bowl, just throw everything in and mix? It absolutely does not get easier than this. If yes, I can get it tonight IY"H. It's the only chocolate cake I ever make.

Sift into mixing bowl:
6 T. unsweetened cocoa powder
2 c. all-purpose flour
1-1/2 c. granulated sugar
1 t. double-acting baking powder
1 t. baking soda

Add:
1/2 c. vegetable oil
2 large eggs
1 t. vanilla extract
1 c. cold water or orange juice

Mix till smooth and all bits of flour have been incorporated. Bake in greased baking pan (about 8" square, I think, or 2 medium loaf pans) 350 degrees Fahrenheit 40 minutes to 1 hour, until a toothpick or bamboo shish-kebab skewer stuck in the middle comes out clean.

Enjoy! I am now off to tell my mother that her recipe has gone international. Smile

Chen , can this recipe be mixed with wooden spoon? I hate shlepping out the mixer. (That's why I bake these impossibly complicated yeast cakes that can be kneaded by hand. Very Happy )

Guess what? There IS easier! MY mother's chocolate cake.....and next time you're without your recipe book you'll be fine because you'll know it by heart - almost everything is in 2's! And no mixer!

2 c. flour
2 c. sugar
1 c. cocoa powder
2 tsp. baking powder
2 tsp. baking soda

Mix well.

Add:
2 eggs
1/2 c. oil (upside down 2 Smile )
2 tsp. vanilla

Mix.

Add:
2 c. boiling water.

Pour into 9x13 pan. Sprinkle with choc. chips if desired. Bake @ 350 for about 40 min.

A good frosting instead of the choc. chips is 1 pint Rich's whip cooked on low flame with 200 g. baking chocolate until choc. is melted.

Yum!
