Always looking for new ideas. I'm interested to hear what you make.

I'll start.

I always make at least 2 or 3 of these-garlic confit, tomato dip, dill dip, matbucha.

Once in a while I make one of these-roasted garlic dip, jalapeno dip, mushroom dip, roasted jalapenos and garlic.

Let's hear yours!

Eggplant dip:

Cut a small eggplant into cubes. Fry in generous amount of oil. Add a diced red pepper. Add salt, pepper, garlic powder and onion powder. Add 2 tablespoons brown sugar. Add 2 tablespoons tomato paste. Cook it up until everything is soft and it starts caramelizing on the bottom of the pan.

Olive dip

Small jar of olives rinsed and drained
2-3 tablespoons of mayo
Pepper
Garlic powder.

Process until combined but chunky.

Onion dip. Caramelize onions in a little oil and salt on medium-low for hours until very nice rich color. Blend with enough Mayo to make into a dip. Delicious and easy.

Moroccan Salsa

I like to make this in big batches and freeze it

Lots of peeled tomatoes (like 7-10 or more) (to peel, drop into boiling water for 3-4 min until skin cracks. Remove and place in cold water to cool. Skins peel off very easily)
Fresh garlic sliced. 5-7 cloves
1-2 opinions sliced
A bell pepper if you want to add it
Salt
Pepper
A sprinkle of sugar to balance acidity
Cumin
Paprika

Fry up onions, then add garlic. Add peeled tomatoes largely diced. Add pepper and spices. Cook on medium/ low partially uncovered for 30-45 min (or longer) until it reduces and gets dark and thickens.

There are all the dips I make- not necessarily at the same time, but the ones I know how to make

Jalapeno dip (from overtime cook)
Dill dip- super easy
Sweet Onion dip- think I got the recipe on this site
Eggplant Dip
Matbucha (not a big fan but my husband likes it)
Tomato Dip
Garlic Confit

Dairy Mint Eggplant Walnut Dip:

Cut eggplant in half, cut diagonally, oil and salt and bake 45 mins at 180°c (more healthy than frying! Wink ), after it's out of oven and cooled down I smash it up with a knife so it turns into a chunky/mushy consistency

Sauté olive oil and diced onion in a pan, then add turmeric, dried mint, and let it sit on medium heat for a few mins, stirring occasionally

Add eggplant, smashed walnuts, and water, mix and simmer on medium-low for 15 mins

At the end, add a tbsp of yogurt and stir it together

Sometimes I'll also make it with zucchini, but instead of baking it I just cut it into very small cubes so it will be easier to smash once it's softened for a while on the stove

Here's my pickle dip from the other thread

1 can pickles in brines
mayo to cover
garlic powder
onion powder
paprika
a little honey

I dice the pickles small but not tiny, it needs to have a crunch, and then add the rest of the ingredients.
It's my favorite dip to make, so easy and full of flavor

Tehina
Coleslaw
Roasted pepper dip
Avocado salad
Savory red cabbage
Moroccan carrot salad
Grated carrot salad
Beet salad

ETA: I’m anonymous bc my family will be able to tell this is me.

Eggplant carpaccio with tehina, silan and fresh parsley

Roasted eggplant cubes with peppers, minced garlic, fresh parsley, olive oil, salt and pepper. Bake in oven on 400.

I add vine tomatoes to my garlic confit 😋

I dont do mayo dips

I use the bnei darom canned olives and Add a garlic cube or 2 instead of the powder. We like it much better.

What's jaluk? Pretty sure I never heard that one.

jaluk/zaalouk- I dice up eggplants and toss with a generous amount of olive oil, paprika, cumin, salt, pepper, turmeric and grill until nice and soft. I lay it out on a baking sheet evenly spaced and also add fresh garlic to roast with it.

When done, add to bowl and I chop up roasted peppers, roasted tomatoes, fresh parsley, chopped olives, and mix together with some harissa.

moroccan carrots: slice carrots and boil until a fork can pierce through but not too soft or mushy. Cut into slices or cubes and toss with fresh lemon juice, alot of fresh garlic, cumin, salt and chopped parsley. If I add any pickled lemon I like to add, I just finished and need to make more though.

Moroccan beets: I use a crinkle knife and make small cubes. Toss with vinegar, sugar, cumin, salt and fresh parsley. Super easy
