Challah with lots of dips and salads.

Salmon fish.
(If guest are chassidish or appreciate traditional we do Egg and liver in the middle of the table with a salad. )
Cholent.
Corned beef or pastrami kept hot in cholent. sweet fruit crumble. Potato kugel.
Dessert of some kind such as napolean, tart with custard

Mazza (chicken nuggets, lachmagene, mini hot dogs, deli roll ect)
Meat board

Cholent with eggs
Over night potato kugel
1 more hot main (can be roast, pulled beef, chicken ect)

Brownies with ice cream

1 grain salad (sometimes served with main)
Gefilte fish
Salmon or sushi salad
Cholent
Grilled chicken
Potato kugel
Vegetable kugel or greens beans or broccoli
Sweet side ( apple kugel carrot muffins lukshen kugel)
Cake/cookies/ice cream pie, fruit, tea

This was developed due to guests with varying health concerns. People who are weight conscious or gluten free can easily enjoy plus people who like sweet foods can. If I know that we are having davka one type and not the other I adjust the menu.

When it's just my family:
Challah
Dips
1 salad
Gefilte fish
Cholent
Potato kugel leftover from the night
Vegetable left over from the night
Sweet side of a child made it.
Dessert.

For a change I sometimes make chicken and rice Cassarole instead of chulent
But you need to ask your Rav if you can put it on the blech on Shabbos

Here is my menu

Fried Tilapia or Ceviche in the summer
4 salads
3 dips

Cholent or Chicken & Rice Cassarole
Potato kugel
Vegetable kugel
And I heat up or serve at room temp all the leftover roast (I make extra for this) and veggies from the night. But you need to ask your Rav what you are allowed to reheat.

Dessert-
Fruit platter
Something mezonot
Ice cream
Dessert that guest brought

Challah (reg + sourdough) and dips (I make 2-3, and we'll buy or make according to any specific preferences guests have)

Gefilte/salmon/sushi --> some combo of those 3

DH and I both dislike cholent, so unless we're having a large family we skip it. Instead I'll do:
Grilled chicken
Hasselback salami
Deli roll
Quinoa salad
Lettuce salad
Other small salads like Israeli, pasta, broccoli, etc
Turkey deli
Kugel

Cake, ice cream or something for dessert

My husband like the traditional 'Shabbos flavored' salmon

This is for 4 slices if fish
1 onion sliced in circles
1 carrot sliced into circles
3 cups water
3 tablespoons sugar
1 1/2 tsp salt
Pinch of black pepper

I let the mixture bubble and the add half a roll gefilte for 50 minutes, then add the salmon for 20-25 minutes
