here's the original, I make some modifications though
Ramen Zoodle Soup
2 boxes good quality chicken stock
2 boxes good quality vegetable stock
Box zoodles
Bag shredded carrots
Box slice button mushrooms
Full stalk sliced scallions
3 cakes brown rice ramen noodles
2 cubes ginger
Kosher salt
Fresh black pepper
Boil soups, add veggies, reduce to simmer, add in ramen cakes - shred with fork after 4 minutes, add in chicken cut into bite sized pieces.
Marinate cutlets in olive oil, kosher salt, fresh black pepper, & 1 tablespoon Shoyu sauce for at least 30 minutes. Grill pan for 5 min each side- don’t dry out!

^^ this is recipe I based it off of, though I’ve considerably tweaked it (I skipped the spinach and lemon, and used waaaaaay more carrots, like probably a whole pound of chopped carrots)
I sautéed Jack’s Gourmet merguez (Moroccan) sausage with the onions to make it fleishig and more filling. But a single 12-oz pack of sausage is enough for a whole pot of soup.
