I have some choc. chip cookies left over from last week which are pretty hard and crumbly by now. Is there any way to use them, maybe in a crust or something? Does anyone recycle their old cookies?

Have you tried microwaving to revive them? Wrap in a piece of paper towel, heat for about 10 seconds on medium, and they might seem fresh again. Then eat them pretty quickly, before they get hard again?
Maybe grind in food processor and sprinkle on ice cream?

Ice cream topping was a good idea, but they were made in a fleishig oven. How do you make choc-pb cookie balls and rum balls?
Clarissa, if I microwave them, I will eat all of them right now. I was hoping to spread the love (and the calories) a little more.

I use them as crusts for baking pies or cheese cakes ( you can make a pareve cheese cake)
make a pareve cookies and cream ice cream. crumble cookies, 2 eggs, dessert topping, sugar, vanilla sugar.. freeze.. if you want the exact amounts, lemme know..

if you have the spice and spirit there is a rum ball recipe. or try google.

So I ended up crushing them to make them into a crust for a choc. mousse pie (my egg free mousse recipe). I'll let you all know how it came out after shabbos.

I have a great recipe for these if you have enough. Dip each cookie in a bit of pareve milk, then Kahlua or similar liqueur. Line a spring form pan with them, breaking some to cover bottom completely. Then whip some cream and put thin layer on cookies. Repeat two more times. When you cut it, it will look like cake and people often ask me how to make this great desert. Haven't made it in a while cuz of the calories but the kids love it. Enjoy.

Thanks, it sounds like our family ice box cake recipe, which is made by layering Dutch chocolate cookies and whipped cream. It is to die for. There are lots of layers and the whipped cream really sinks into the cookies and makes it like cake. Again, to die for.
The cookies made a great crust for my mousse, although I originally froze it, and it was not great frozen. Much better in the fridge.
