Can I make Latka batter today to fry tomorrow?

Hi. Wondering if it’s a good idea to make the Latka batter today, put it in the fridge, and then have one less thing to do tomorrow. And fry them tomorrow.

In that note, any food latka recipes to share? I usually just mix grated potatoes with a random amount of eggs and oil!

Thanks. Can I peel the potatoes tonight and keep them whole in the fridge in a bowl of water?

I usually make 1 batter for 2 days. I close it tightly and refrigerate it
I scoop off the top of the batter which turned gray.

I would peel the potatoes and keep them in a large mixing bowl of cold water, making sure they are all fully submerged in the water.

This one comes out great. Tried and true. I use the Between Carpools hack of processing half the potatoes with the kugel blade and half with the shredder blade- makes a great texture

5 lbs. white potatoes
4 eggs
Salt
Pepper
Onion powder 2/3 cup flour
Oil for frying

Peel and grate potatoes. Add other ingredients.
Heat oil. Put a piece of carrot in it so the oil doesn’t burn.
With a serving spoon put latkes in hot oil.
Fry for 4-5 minutes on one side. Turn over and fry the other side.
Take out and drain on paper towels. Makes about 27 latkes.
