Best potato latkas recipe please

Never made latkas. I need step by step instructions for potato latkas.

I use my potato kugel recipe minus the oil.
3 potatoes (feeds 3-4 ppl, approx 12 latkes)
2 eggs
Pepper
1/2 T salt maybe drop less

Use grater blade, so it's stringy and that gives more of a crunch
Batter will turn pinky brown while you fry, and that's fine
Heat oil in frying pan and fry until brown and crispy, flip. Add more oil as needed.
Best eaten fresh, put you can rewarm single layer in oven.

If you go for an onion taste in your kugel, you can grate some here as well.

I forgot to write, don't use the liquid. Depending on your patience level Cool you can pour the liquid down the drain, form balls in your hands and squeeze, or put everything in a cloth and squeeze out the liquids. Helps it be more crispy.

Peas love and carrots has the best recipe!

51/2 lbs potatoes and 1 onion
Shred half into strings, and process the other half.
Using a colander and a towel, squeeze out all moisture into a bowl. Let the water sit.
To the potatoes and onion, add salt, pepper and 2 eggs.
Drain the liquid and add the potato starch that is left on the bottom to the mix.
Mix it all up. Fry 2 tbsp at a time. Place it in the pan, and then flatten it with back of your spoon.
Fry until bottom is crisp, then flip and fry until crispy.
Enjoy!!! 😋
