Stir fry - rice with soy sauce, some scrambled eggs, usually some chicken too.
I’ve also done them with garlic and spices and some tomato sauce, plus chicken. Overtime cook has a delicious recipe for this on her website. https://overtimecook.com/2021/.....stew/

Growing up, my mom made chicken in a pan on the stove and added potatoes and sometimes peas and carrots. It was an easy one pot meal.

Brown meat, add spices, add frozen mixed vegetables. If I have time saute onions first. Really good with any grain especially rice or couscous! If you have taco seasoning a little of it is great with this.

Some picky eater here won't eat it if its discernable. Would it work in a blended soup?

I agree that this is a great use.
Even "gourmet" cooks use frozen peas in recipes and frozen carrots in stews are fine.
A benefit is that you can make a large pot and it freezes well and improves with time - stews are better the next day.

Make it into soup! Put in a pot, add onion and spices, immersion blend, and done!

I add to lentil soup along with lentils, onions, and whatever other veggies I have. if you blend it they might not be discernible.

Spray with a nice amount of Pam and add a healthy amount of spices, put in the oven at 400 (or whatever temp it’s on for your other food cooking in there) for about 30 min or until it starts looking crispy.
This works with any of the frozen bags of veggies my family loves it
I also use it for soups, fried rice, scrambled eggs/ omelette, fresh salad
