Also known as Whoppee Pies
1/2 cup crisco (vegetable shortening)
1 cup sugar
1 egg
1 cup water
2 cup flour
1/2 cup cocoa powder
3/4 tsp baking soda
1/2 tsp salt
Preheat oven to 350
Combine crisco and sugar until fluffy. Add egg. Mix dry ingredients. Add to creamed mixture alternating with the water. Beat until smooth.
Drop by T. on a greased cookie sheet. Bake for10-12 min. Cool and fill with the following filling.
Filling:
1 cup confectioners sugar
1/2 cup crisco
3 1/2 oz marshmallow cream
1/2 tsp PURE vanilla extract
Beat all ing. until smooth. (It will need alot of mixing.)
Usually I double this recipe. It freezes well.
Also if you have leftover filling, it is great between 2 chocolate chips cookies as well.
