First decide where you want to go and then get an address of a chabad house over there and then check for airbnbs in that neighborhood.
I think that's the simplest way.

Phoenix is gorgeous. Very warm, lots of Jews, great food.
The Grand Canyon is about a 4 hour drive away though, and it might not be warm there. But so so worth it!

Keep in mind, not every place has kosher food readily available.
Some chabad houses charge for every meal including Shabbos for guests.
