So many adventurous cooks on this site! Corned beef, roasted veggies, orzo, etc. some other boring classic shabbos foods... anyone else not making super cool exotic dishes?

can you elaborate on the eggplant in the microwave?
u cut it first? for how long in microwave?

Yes peeled and cut. Cover with plastic wrap. About 10-15 minutes per eggplant depending on size. It should be soft enough to easily put a fork thru.

I'm staying traditional: chicken soup, chicken and kugel...

I do the same roasted garlic as imamother above but I buy bag of peeled garlic from Costco that I keep in my freezer. I sprinkle some brownulated sugar... super delicious AND easy!!
Babaganush: eggplant cooked in microwave I add salt, pepper lemon juice and olive oil.(optional: some cumin) Blend with stick .

Would this work with frozen garlic cubes? Talk me through what to do please.

It won’t work with garlic cubes bc you want to have the cloves to spread in your challah. If you only want the taste then you can use the cubes and it will be more of a dip than a confit.

DH is making challah

I made techina and yellow rice, chicken soup is prepped in the crock pot for Shabbos day and will be put on to cook closer to Shabbos, schnitzel is marinating in the fridge. Thinking to make another side or starch, either potatoes and carrots, stir-fry veggies, or sesame noodles maybe. We also usually have tomato-avocado-hearts of palm salad Shabbos day, which I make right before the meal.
