Side of Salmon (not sure what I'll do on it)
tomato dip, roasted garlic & jalapeno, roasted basil/brown sugar mini peppers, dill pickle dip, roasted olives & hot peppers
chicken soup with lukshen
apple kugel, potato kugel, deli roll (more for friday then the meal honestly Laugh )
deli salad
liver
chicken chulent with kishka (eggs in chulent)
Smores pie with cornflake crumble ( I tried a new recipe from Busy in Brooklyn, it looks really good)

Some of the simple menus sound like a lot to me!

I am making
Challah (from the freezer)
Sourdough (also from the freezer)
Chicken soup and kneidlach (from the freezer)
Baked shnitzel
Roasted potatoes
Garlic green beans (frozen green beans with garlic, soy sauce and honey)
Store-bought ice cream and Duncan Hines brownies my daughters made

Shabbos day we will have:
Some sort of lettuce salad I come up with on shabbos
Deli
Store bought hummus and babaganoush
Cholent with kishka and potato kugel (I save leftover kugel in the freezer and add to cholent instead of tossing it)

Moroccan Lamb
6 shoulder lamb chops
Spice rub:
2 tsp cumin
2 tsp coriander
2 tsp salt
2 tsp paprika
1/2 tsp black pepper
1/2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp allspice
4 frozen garlic cubes
5 frozen parsley cubes
zest of 1 lemon
3 Tbsp olive oil

Preheat oven to 425
Mix the spice rub ingredients together and smear it on both sides of the lamb chops. Place on baking sheet and roast for 25 mins.
Remove and transfer to 9x13 pan, cover, reduce temp to 350 and bake for 1.5 hours or until soft.
(I add a tiny bit water to the 9x13 and cook for longer on lower temp)

Jeweled Moroccan Couscous
10 oz Package of instant couscous
1/4 c olive oil
2 onions, sliced
1/2 c craisins
1/2 c golden raisins
1/2 c toasted slivered almonds
1/4 c sugar (I do 2ish spoons bc I don't like it so sweet)
3/4 tsp turmeric
salt
saffron (I don't use this lol)
fresh parsley for garnish (also don't use)

Saute the onions till soft about 14 mins. Add all the ingredients (besides for parsley) and cook till the raisins, craisins plump up about 3-4 mins.
Cook couscous according to package
Combine onion mixture with couscous.

A delicious pairing! But you gotta appreciate well spiced food Very Happy

It's not exactly a recipe. I buy apple cider and pour a good amount into a pyrex pan and add some salt and Chinese Five Spice powder. Then I cut up a couple of acorn squashes in wedges and lay them in the pan. If the liquid doesn't cover I add some more. Cover the pan with foil and bake until the squash is cooked through.
