I'm planning on doing an Israeli style Purim seudah this year.
Problem is that it's drop in and I can't rely on rsvps. I won't know how many are coming in advance. It could be almost nobody, or it could be up to 30. My brain keeps panicking that it will be more than 30 even though that's pretty unrealistic.
I'm planning on having falafel and pita and lots of stuff to put inside.
Right now I plan on having:
60 pitas
160 falafel balls (frozen)
6 containers assorted humus
3 containers techina
2 cans Israeli pickles
1 can Israeli olives
a big Israeli salad
maybe roasted eggplant
Does that make sense?
I also want to have some sort of backup food in case I run out (not likely but my brain won't relax). Any ideas of a cheap, easy, freezable Israeli type dish that I can have on hand just in case?

Don't forget fries. They are filling and Israelis like to put them in falafel as well.

It's a good idea, but I really can't afford that Chicken cutlets are really expensive here.

Burekas?
If you can't buy them frozen, they're easy to make with puff pastry.
Have a few of bowls of bamba and bisli around for people to nibble.
An eggplant salad.

I'd also put out some kind of a dessert and/or fruit. I know people will say that on Purim you don't need dessert, but personally I don't gorge on sweets all day and enjoy a light dessert after the seuda.

True. I was thinking hamentashen and clementines, but would love more ideas!

If you want to keep it within the Israeli theme, you could do malabi, rugelach( but only really good ones) or baklawa. It would feel just like the shuk.
Actually, your whole theme could be a שולחן שוק. They are very popular now in Israel for casual events.

Put out large bowls of sunflower seeds.
They're cheap and gives people something to mindlessly nosh instead of taking a second portion.

Put out little bowls of pitzuchim for dessert - nuts, seeds, little chocolates.
I think there is a halacha that there has to be some fleishigs at the purim seudah, but I never looked into it so ask you LOR.

You are right. Maybe I will make meat burekas (ground beef is affordable enough). Maybe not perfectly Israeli but I'll call it close enough!

I dont think you have enough food amounts.
2 cans of pickles for 30 people isnt enough
1 can olives isnt enough
one roasted eggplant is not enough
Id also do potato borekas, thats cheap and you can make yourself to save more money. If you can afford ground meat id make ground meat and put ontop of chumus with fava beans or onions. I make it on shabbat a lot.

She said up to thirty, and probably less. Not everyone eats pickles and olives. I think they're there more for the atmosphere than as a main part of the menu.
