Foolproof coffee cake

Looking for something that I can’t mess up. Love to cook but baking isn’t my thing and I need to bring this to my Purim seudah. Would love something with a layer or streusel, extra yummy and pretty, too. Please share your tried and true!

Yield: 25-30 muffins or 9x13 (which is usually the right amount for a bundt cake)

Preheat oven to 350
4 eggs
1 1/2 c sugar
1 c oil
3 tsp vanilla
2 tbsp instant coffee, dissolved in 1 c water
3 c flour
3 tsp baking powder
1/2 c mini chocolate chips, optional

Beat eggs until light colored, add sugar, continue beating.
Add oil, vanilla, coffee liquid, keep beating.
Slowly add dry ingredients and mix until smooth.
Set aside.

Crumbs:
1/2 c dark brown sugar
2 tsp cinnamon
2-3 tbsp oil
2 tbsp flour
1/3 c chopped almonds or walnuts
Mix with fork.

For muffins, fill each muffin cup with abt 1/4 c batter, top with crumbs. Bake 18 min.

For cake, you can layer 1/2 batter, then 1/3 crumbs, then rest of batter and rest of crumbs.
Or just use all crumbs for topping.
Bake 40-45 min

It can be convenient to make a coffee cake in a bread machine. All these recipes sound right for a bread machine. You would cool the loaf in the pan.

The booklet that came with the machine will tell you which code.

I call this a farmhouse cake. It is not a bakery style high end cake. Mine come out brown because I use agave instead of sugar, one to one. We all do it our own way. I recommend making one or two of them, before the big day, for practice.

To dress the cake up, dust with powdered sugar, then drizzle chocolate sauce over it in thin lines like drawing. That sauce can be made by microwaving chocolate chips with a little vegetable oil and stirring. You drizzle it from the edge of a tablespoon.

If you put fresh strawberries around and on top, it's fancier. A paper doily is always a nice presentation.

You might serve this sliced spread with jam if you want.
