Use 2 challahs for lechem mishna for small family?

Our family only eats 1 challah per meal and I don't want to waste the other by defrosting it, so we usually end up using a matzah for lechem mishnah, but it just doesn't feel Shabbosdig. What do other people do?

We use either a regular challah + a challah roll, or I bake smaller ones.

Have one defrosted , take a second one out the freezer for lechem mishna and then put it back in the freezer!

I use a matza for Lechem mishna. We eat matza on pesach... never thought of it as less shabbosdik

Some hold that this is bedi’eved because the challah should be in a completely edible state.

I make 2 rolls for shalash seuda and take out one from the freezer on Friday, use it for both meals as lechem mishna and take out the second from the freezer Shabbos day.
You can tell slightly it was out from the day before but if we are hungry we eat it anyways otherwise it's toast /french toast on Sunday.

My husband is makpid to cut both challahs each meal so we do a small 2nd one or matzah.

We have use small challah and a roll for both meals we reuse the roll until Salish seudos

Small roll, or pita or matzah.
We used matzah as לחם משנה growing up. It doesn't feel less shabbat for me at all.

We use matza usually or a roll. One of my kids likes matza better so we anyways have it.
