And a really yummy sauce would be nice

1.5 lb ground meat, 1 egg, 1 tsp salt, 1 tsp garlic powder, 1 cup mashed potatoes.
Mix and form into meatballs.
Heat together 1 jar marinara sauce and 1 can jellied cranberry. Drop in meatballs into bubbling sauce.
Lower heat and simmer 40 minutes.

Use shredded potatoes!!!
Blend cut up onion with 2-3 eggs depending on how much meat you have.(I use stick blender)
Add salt, pepper, paprika, garlic and shredded potatoes.
Make meat balls and cook in tomato sauce. I like to use watered down tomato puree(cheaper that way!)
They come out so soft and so delicious you won't make it any other way!!!

So what’s better
Shredded potato or mash potato?

And which freeze better ?

Freeze raw or cooked?

Do I freeze in sauce?

I want them to come out super yummy.
I want ppl to actually eat and like them

I freeze cooked when in sauce(you can't tell it was frozen when reheated!)
If I make hamburgers I like to freeze raw and grill when defrosted.
You can use mashed potatoes it's a great shortcut if you are in a hurry but shredded potatoes give it moisture that keep the meat from drying out!!

2 lbs of meat, one of those small cans of tomato paste. Mix, make into balls, broil in the oven for 5 min then turn off the oven and leave them there for like 15 min

I've done it in the past and it tasted fine. Maybe your mashed potatoes were not good?
The key is to mix with water until it has the consistency of real mashed potatoes.

I do 2.5 tbsp of potato starch
1 egg
To every pound of chopped meat.
Spice as you like I put a bit of sugar into the meat (sugar. Police please don’t come after me)
Now here is the key . Use less sauce than you think you need. The meat releases juice, and it’s delicious .
I make this recipe year round my kids call it magic meatballs cause as many as I make they get inhaled

Potato starch is best. I used to do shredded potatoes until someone gave me the idea of using potato starch. I do the sweet and sour meatballs from bais yaakov cookbook and leave out the matza meal and add potato starch as necessary. I make it all year round bec my daughter is celiac. Tastes delicious and not ‘pesachdik’
I freeze it once it’s cooked and it freezes really well.

Make a quinoa flour by processing it into the food processor and then adding it to your meatballs as a binder
