Agreed, I sold off my KBD and I have multiple recipes I use from Perfect for Pesach

Around The Passover Table is pretty good. It is by Jayne Cohen. I have made her Pistachio Crusted Fisher

The New Passover Menu by Paul Shoyer has some interesting stuff. I have made her "Seder Plate Salad"

I also have a cookbook by Streit - the matzoh heiress which has some fun recipes.

Also the very good Jewish cookbook authors like Joan Nathan have sections on cooking for all of the holidays.

This might sound funny, but a favorite in my house is “Let My Children Cook” by Tamar Ansh.
There are many delicious but simple recipes, intended for kids but I know many adults who don’t like to do complicated recipes either! These recipes have very few steps, many one bowl or one pot recipes.
Many of the recipes are kid-friendly finger food mains or cute snack ideas. But we like a lot of the easy sides, kugels, and desserts from there.
