Don't have fridge room for them. I've left them room temperature in the past but I bought much more for pesach and don't want it getting bad

You definitely can, it just gets wrinkly faster so if you you have some fridge space, I would put the YT ones in and leave the ones you will be eating this week out.

Keep them dry and airy in a cool place, box or basket or spread out. Not inside a plastic bag. If you have to keep them out for several days, inspect them daily and throw out immediately anything that starts growing mold.
