I dont put too much water - just before it covers. (I heard this is the way to cook it - dont know why)
but I dont get much sauce.
when I pack it into containers there is very little for each pan.
do you blend the sauce with the onions and add water?

What kind of steak are you trying to cook? Ive never heard of cooking a steak in water so maybe if you share what your trying to make we can help you.

What cut are you describing as "steak"
Steak is generally used to describe a tender cut like a ribeye which is seared quickly and generally served medium rare at the most.
Cooking with liquid is braising and is done with tough cuts of meat which need to be cooked a long time in order to tenderize them. Briskets for example are generally braised with some kind of liquid.
FwIW - do you literally mean water? Because generally braised meats are cooked in a flavorful liquid that adds to the flavor - e.g. tomatoes, wine, pomegranate juice, broth etc.
