Extra egg yolk

So I made yummy nut snow cookies and now I'm stuck with a bunch of egg yolks. I know I can simply throw them out but I don't want to. I'm looking for ideas to use them. Any recipes that I can use up my egg yolks?

Nut Cookies

4-5 egg yolks
2 C ground nuts - ½ almond and ½ filberts is great
¾ C Sugar
1 tsp Orange Juice, or more
Mix everything.
Form balls, and bake at 350 for 12 min

We just throw them into matzah brei.

If you don't eat that, add them to a fritata, omelette, quiche, or any other egg based dish.
