I put a spoonful of vinegar and no other liquid. I drain the cooked/cut potatoes for 2 hours in a strainer in the fridge before adding dressing ingredients.

If you put in pickles, that gets watery the next day.
If you use pickles, I’d suggest cutting away the seed part and strain the pickle pieces for an hour before you put it into your salad.
If you are open to it, better use the crispier smaller pickles, they have less liquids.
If you don’t put in pickles, I hope someone else comes up with a possible solution.

I put in pickles and it doesn't get watery so I don't think it's the pickles

Same. Also put pickles and I use lemon juice. Doesn’t get watery.
What potato’s do you use?

I don't think I'm overcooking potatoes, one time I even undercooked them. Other ingredients are carrots, celery, eggs, mayonnaise, onions, drop of vinegar-I thought every recipe has vinegar, and spices.

Sprinkle a tablespoon of vinegar and a teaspoon of salt on the potatoes right after draining them when they’re still very hot. Add the rest of the ingredients after they cool off a little. If you use low fat instead of full fat mayonnaise that can get a little watery.

Try to skip the onions or minimize the amount.
Onions in my mayonnaise-tuna salad caused some liquid, I skipped the onions.

I'll try without the vinegar and less onions. I bought potato salad that had onions in it and didn't get watery, so how did they do it?

Not sure. I noticed mine gets watery if I put too much lemon.

S&P
Lemon
Pickles.
