My husband loves this recipe. I make these as mini muffins and he snacks on these at work all the time. These freeze really well.
2- 4 mashed bananas
1 cup unsweetened applesauce
1 egg
1 1/2 teaspoons vanilla extract
2 cups flour (also good if you substitute 1 cup of whole wheat flour)
1/2 cup white sugar (or 1/4 cup sugar & 6 packets Splenda)
2 tablespoons unsweetened cocoa powder
1 tablespoon baking powder
1/2 teaspoon salt
1 cup (parve) chocolate chips
Bake at 400 degrees, about 15-20 minutes.

Thanks for the recipe, my 3-year-old is enjoying... I was so looking for a healthy muffin recipe and spotted this. I have to say, though, it didn't work out so well for me... I think because:
1. I don't think the recipe could handle using 1/2 whole wheat flour
2. I skimped on the choc. chips to make it even healthier... I think it needs those chips
Just edited to say DH likes the muffins, so I guess they turned out better than I thought...
