Anyone have a lowfat biscotti recipe?

biscotti is the same thing as mandlebrot. I would post, but mine is WAAAAYYYY fatty.

Skinny Lemon Biscotti

4 egg whites
1/2 c. sugar
2 T. oil
1 tsp. vanilla extract
1 T. grated lemon rind
1 T. lemon juice (preferably fresh)
1 cup whole wheat flour
1/2 tsp. baking powder
2/3 c. slivered almonds
2/3 c. dried apricots
1/2 tsp. ground cinnamon mixed with 1 T. sugar

1) Preheat oven to 350 degrees. Spray a small (8x4 inch) loaf pan with cooking spray.

2) Beat egg whites with sugar, oil, and vanilla until well mixed, about 2 minutes. Add the lemon rind, juice, flour, and baking powder. Stir in almonds and apricots and mix until combined. Pour into the preapred pan and spread evenly.

3) Bake for 30 to 35 minutes or until golden. Let cool for 10 to 15 minutes, then invert and remove the loaf from the pan. Wrap in foil and refrigerate overnight (or up to 2 days).

4) Unwrap the loaf and slice as thinly as possible, about 1/4 inch thic, with sharp serrated knife. Arrange slices in a single layer on parchement lined baking sheet(s). Sprinkle lightly with cinnamon sugar mixture. Bake in a preheated 250 degree oven for 30 to 40 minutes, until crisp and toasted.

(This recipe is from Norene's Healthy Kitchen. I've never actually made these, but I've always wanted to try them.)

Almond and Apricot Biscotti

1 1/2 cups w/w flour (I use white w/w flour)
1/4 brown sugar (I use splenda brown suga so it's 1/8 of a cup)
1 tsp. baking powder
2 eggs, lightly beaten
1/4 c low fat soy milk
2.5 tblsp. canola oil
2 tblsp. honey
1/2 tsp. almond extract
2/3 cups chopped dried apricots
1/4 cup coarsely chopped almonds

mix dry ingredients in a bowl, add the wet ingredients, mix with floured hands until the dough is well blended
place the dough on a long sheet of plastic wrape and shape by hand into a flattened log 12 inches long, 3 inches wide, about 1 inch high. lift the plastic wrap to invert the dough onto a nonstick baking sheet. Bake until lightly browned, 25-30 min. on 350. Cool for 10 minutes, slice with a serrated knife onthe diagonal into 24 slices, 1/2 inch wide.
arrange slices on the baking sheet return to oven 15-20 minutes until crisp.

3 cookies have 79 calories, 3g fat, 1g fiber.

Chocolate Chip Biscotti
I make the same recipe, but put in mini chocolate chips instead of dried apricots and vanilla extract instead of almond extract

oatmeal craisin biscotti

3 eggs
1 c sugar (use splenda)
1 tsp. vanilla sugar
2 1/4 c flour (use white w/w flour)
1/2 quick cooking oats
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (I leave out)
3/4 tsp. cinnamon
1/2 c craisins

beat eggs and sugar in a mixer, add dry ingredients and craisins mixing well
with wet hands form dough into two loaves on a lined cookie sheets leaving as much space as possible between loaves.
bake for 25 min. on 350
cool, slice 1/2 inch thick, rebake for 7-9 minutes

oatmeal chocolate chip biscotti
sometimes I'll use this recipe and leave out the cinnamon and put in choc. chips instead of craisins, then it's oatmeal chocolate chip biscotti

If you are still interested...I make these and they are just as good:

64 calories and 2.8 g. fat each:

3 eggs (or 2 eggs and 2 egg whites)
3/4 c. sugar
1/2 c. oil
2 c. flour
2 c. special K, Rice Krispies, or Corn flakes
2 tsp. baking powder
3/4 tsp. cinnamon
1/2 to 3/4 c. sliced almonds
1/2 to 3/4 c. choc. sprinkles
2 tsp. cinnamon + 1/3 cup sugar

Beat eggs with sugar and oil. All four, cereal, bkg powder, cinnamon, almonds, and choc. sprinkles. Chill for 15 - 20 minutes. Divide dough into 4 rolls. Leave 3 inches between rolls on greased cookie sheet. Bake at 350 for 25 minutes. Remove and cool. Reduce oven to 250 min. Cut rolls into 1/2 inch slices. Lay cut side up. Sprinkle with cinnamon and sugar mixture. Bake 250 for 45 minutes.
