Chicken with apricot lime glaze
a la spark ppl
Ingredients

Lime Juice, 0.50 cup
soy Sauce, 4tbsp
Sweetener; 12 tsp
Chicken
Apricot Jam, 8 tbsp

Directions: Bake chicken topped with above ingredients.

Eat and enjoy !

has anyone ever tried this with lemon juice? Because it looks easy and deliciouls but I have a huge bottle of lemon but not lime juice.

Yes, you can use lemon. Sure you can cook not bake; food is very forgivig.

I just put it in the oven but it's going straight into the freezer after because I already defrosted the chicken but I have a wedding etc.. and don't need it for supper this week. I'll let you know how it looks tonight but how it tastes probably only next week.

is this really really sweet? I was just eating some apricot preserves (bought because I had this recipe in mind) and it was way too sweet for me, seems like it would be enough to balance the lime juice without the added sugar.

is that supposed to be 12 tsp sweetner?

ok I actually made this, 12 tsp brown sugar...

well I like my chicken well done and brown and the sauce caramelized until it was too strong for my taste. definitely not too sweet though. I think the apricot gets a bit tart with the cooking.

I still have apricot preserves left, so I'll make it again. I'd either cook it in a pot, or watch it very carefully to make sure the sauce doesn't caramelize at all.
