When I tried to make latkes last week, I flipped them and they stuck to the pan. I used a ton of oil, but it still stuck and got ruined. Anyone have any tips?

You don't need a ton of oil, just a fair amount and make sure there is a little oil in the mixture as well.

Oh, and best to use a non-stick pan if you have it. (You probably don't or don't want to use it but maybe you could borrow from a neighbor because they really do the trick)

Fab, do you know how many minutes I should wait before I flip it?

It depends on what flame. I usually put them in sizzling oil and then lower the flame to med-high. When I see the edges of the bottom start to brown, I flip. (Don't remember exact time, maybe 4-5 minutes?)

I try to scrape them from the pan after they sizzle and get some oil underneath ...

You need a nonstick pan. Otherwise your latkes will probably stick unless you use a ton of oil. Also, with a nonstick pan, you don't need to use NEARLY as much oil. I use Pam and they come out great.
