Okay, so we have started buying frozen bread dough at our local grocery store. It has an OU but it is not pas yisroel. It doesn't matter about the pas yisroel because it is just dough that we let defrost and then bake.
The question is that the dough is one-pound loaves and I usually make two of them for shabbos. Do I still take challah ? Without a bracha or not at all ?

this question was in the hamodia this week, the author said that the bracha of hafrashas challa was only at the time of making the dough, he said that if the dough is made by a jewish company, than the dough was taken off, if it was not made by a jewish company than they are not obligated to take challah, but in either case, just because you are baking the challah, does not make you obligated to take challah.
