Need easy dressing for this salad

I'm bored with my old classic (olive oil, garlic, salt, pepper, lemon juice) for this salad. The salad is a spin-off of one from dear ole' S & S.

it has chickpeas, baby corn, kidney beans, and black olives. I want something creamy and tangy but not too difficult.

any ideas?

Dijon mustard, splash of soy sauce, garlic and maybe mayo to cool it down a little?

Yesha's sounds really good.

I used to make one with dijon, vinegar, basil, garlic, s&p..very tangy so small amounts of everything...you could add a bit of olive oil as well.

My fave is toasted sesame oil, rice vinegar, salt and pepper. YUM!

Ooohh yum! If you like chickpeas with sesame, there's a great recipe for a chickpeas with sesame and lime/lemon in the cookbook Gatherings - one of my favourites.

To the OP - if you're looking for a quick and easy salad however, don't try it this week...

I think I'm going to write these ideas down! I need new dressings in general. Very Happy

here's what I found online. pretty basic--can't get too wild with the ILs' tastes. LOL

* 1/4 cup mayonnaise
* 1 tablespoon prepared mustard
* 1 tablespoon honey
* 1/2 tablespoon lemon juice

I think I will experiment with garlic also.

I was going to suggest adding honey, but I'm not sure how well it would go with the saltiness of the baby corn and the black olives...

this dressing is very easy and yummy.
1 cup mayo
1/4 cup vinegar
1/4 cup sugar
1/4 cup water
salt & pepper to taste
2 crushed garlic cubes
I just use lettuce, purple onion and cherry tomatoes. I sometimes add croutons.

Ditto on Bubbles' recipe. That's the one I was going to suggest. Throw in some grilled chicken, too, to the lettuce, tomatoes and croutons. Yummy!
