Are you asking because of allergies? There is this egg replacer stuff that comes in a box. The company I'm pretty sure is Ener-G. They have recipes of how to bake things with that stuff instead of actual eggs.

Yeah, it's basically just corn starch...try to google the ratio, you just beat corn starch with water and it replaces the egg in a regular recipe.

Divvies chocolate cupcakes
From the back of the Heckers flour
1 1/2 cups Heckers unbleached flour
3/4 cups white sugar
1/4 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
5 tbsp. veg. oil
1 tbsp. white vinegar
1 tsp. vanilla
1 1/4 cups water
Preheat oven 350 degrees, and line muffin pan with 12 paper baking cups.
Bake 25 min.

Applesauce Muffins
2 1/4 cups unsweetened applesauce
2 tsp. baking soda
3 cups flour (whole wheat, white, or a mixture of the two. Whatever you prefer)
1 1/2 cups brown sugar
1 cup oil
2 tsp. cinnamon
Mix the applesauce and baking soda together, and let it sit for 5 min. Add the rest of the ingredients, mix it up well. Spoon the mixture into a muffin tin and bake for 20-25 min. at 450. Makes about 20 muffins.
