Im looking for an EASY cake or cookie recipe that doesnt take long to prepare.
Preferably something with oil instead of margarine and definitely without crisco or shortening.

the chocolate chip cookie recipe on the side of the chocolate chip bag (openheimers) always comes out great (when I don't burn them) I substitute oil for the margarine - I put a drop less than the recipe calls for.
this brownie recipe is easy and quick
1 cup oil
2 cups sugar
1 cup flour
4 eggs
2 tsp vanilla
pinch salt ? (not in recipe but I add it)
1 cup cocoa (use a little less if you're using good quality cocoa)

I think so - theres a thread on it here - some say to do 3/4 cups for every cup. It also may be helpful to beat the eggs and oil and sugar together before adding the rest of the ingredients. I would do it faster in a cake than cookies though.

Here's a really yummy moist easy chocolate cake recipe:
Mix the following well and bake at 180F for about an hour:
4 eggs
1 cup oil
1 cup cocoa
3 cups flour
2 tsp. vanilla
2.5 cups sugar
2 cups water
1 tsp. salt
1.5 tsp. baking powder
1.5 tsp. baking soda

I once posted a recipe for a super easy bundt cake.
Here's an easy bundt cake that tastes yummy!
1 cup oil
2 cups sugar
3 eggs
2 cups flour
1 cup orange juice
2 tsp baking powder
1 tbsp cocoa
Combine oil, sugar and eggs till light and fluffy. Add flour, baking powder and orange juice, alternating wet and dry. Pour mixture into greased bundt, reserving 1 cup batter. Mix cocoa into reserved batter and pour over cake batter in the pan in a circle around the bundt (closer to the middle but not entirely). Bake at 350 for 1 hour.
I actually just pulled one out of the oven and the house smells yummy. You can glaze it if you wish!
