(For those who want less work: I took a partially defrosted turkey breast and sliced it across to make cutlets, rather than strips)
Oven Fried Turkey Strips
1 5-6 lb turkey breast
1 cup flour
1 Tablespoon paprika
4 teaspoons salt
1/2 teaspoon pepper
2 cups dried bread crumbs (matza meal)
2 eggs
1/2 cup milk/water
1 cup margarine (I used oil)
1. Cut turkey into strips about 5" x 1"
2. Preheat oven to 500F. Combine flour, paprika, salt and pepper on one sheet of wax paper, and dried bread crumbs on another. In pie plate, with fork, beat eggs with milk. Coat each turkey stip with flour mixture; dip in beaten egg mixture, then roll in bread crumbs.
3. In oven, in 15 1/2"x 10 1/2 " jelly roll pan, melt 1/2 cup margarine; carefully remove pan from oven. Arrange 1/2 of turkey strips in single layer in pan; bake 15 minutes or until lightly browned and fork-tender, turning once.
4. Repeat step 3 for remainder.
Serve hot or cold (there were people here looking for new Shabbat ideas)
