my son uses spelt matza.. There is also oat matza but that sells out fast and is very expensive

Mrs Weiss from digestive wellness says that the scders she knows eat a kezayitz matzah for afikomen as matzah is midoraysa at the first seder. If they get sick from it they don't eat it again by the second seder.

CYLOR or ask Esther Weiss for recommendations of rabbonim who are familiar with the diet. I know of a NJ based rabbi, can't remember his name but he's on the kosherscd yahoogroup. Spelt is recommended by many as more easily digestible.
