I overbought carrots and dont want them to go bad. I made carrot muffins, and sweet potato-carrot kugel. Any ideas of what other things I can make with carrots (I'd like to do it today and freeze if necessary?)
Also, we dont like carrot cake!

You don't like carrot cake, but have you tried carrot-cinnamon cake? Maybe served cold, with an ice cream! mmmm.
Steamed carrots with sugar and cinnamon are delicious too.
Grated carrots in a salad, maybe with lemon juice.

How about a shredded carrot salad? You can make it with a drop of mayo, water and spices. Or with lemon jucie, olive oil, dill and spices.
Oh, and crispy fried carrot shreds. Peel long shreds of carrots. Fry in hot oil.

zucchini carrot soup: sautee onion, add chunks of carrots and zucchini, and sautee with onions for a few minutes. add 1 Tbsp. potato starch and mix add water to cover and salt and spices cook for 1 hour and then puree

tzimmes?
diced carrots (or sliced thin if you dont have the patience), flanken, sugar, and a touch of cinamon (optional). let it boil for--- IDK like 3 hrs on a low simmer, thats it.

Carrot soup
My recipe is just onions, potatoes, carrots, water, and salt. Simmer until soft, then mash or puree.

sweet carrots. peel and slice into 2 inch sticks. make about 2 c carrots
put 1/2 c honey
2 Tbs olive oil
1/2 c water
1/2 tsp salt
simmer 15- 20 mins till carrots are soft and serve warm or cold as a side dish

Crunchy carrot Salad
10 carrots, shredded
1/2 onion, diced
5 dill pickles, shredded
Dressing:
8 tbsp pickle juice
4 tsp lemon juice
1/2 cup mayonnaise
1/2 cup sugar
Place carrots, onions, and pickles in salad bowl. Combine dressing ingredients and pour over salad.
Mix thoroughly to combine.
This salad will keep for several days in the refrigerator.

Oh, I also made the tzimmes like carrots, and I dont have a juicer!
To Canadamom -I like to cook with more specific directions.
Can you approximate how many zucchini's, carrots etc- So that I can properly make it?

Carrot souflee is heavy on the carrots. For a 9x13, cook 2 lbs. carrots (about 14 average size) and puree them. Add a bit of oil, eggs, sugar, cinnamon....Has a matza meal & nut topping - if you're interested, let me know and if I have time I'll b"n post the recipe.

sounds delish... I basically have enough carrots around to feed a rabbit farm so I'd definitely be interested!

5 large zucchini chopped
proceed with ing. above
(this is about 10 qt. pot) use less for smaller pot
