I came across this recipe and made it for company tonight. it was terrific and received rave reviews...

it's great because it's meant to be covered so you can double wrap it and make it in a fleishig oven.
I made it in a 9x13 and used 1 and 1/2 matzah slices per layer. I also used ricotta instead of cottage cheese and used more cheese than the recipe called for (just eyeballed what I thought would look good.) and since I used slightly more matzah, I also added slightly more water at the end.
this recipe is totally a keeper and I might just make it year round too since it's so easy and delicious.

I have a simpler recipe--
square foil pan--
layer-
sauce (whatever kind you like)
matza
sauce
shredded cheese (again, whatever you like)
matza
one pound cottage cheese
matza
sauce
shredded cheese
you can put spices on top if you want, I like oregano and onion powder.
cover with foil. place pan inside large frying pan. pour water into frying pan. turn on flame, keep lasagna there until top layer of cheese has melted. you may have to add more water to the frying pan.
no oven needed, so if you don't kasher your oven for pesach you can still have lasagna. also, I make this during the year with my extra matza. I made some when my daughter was a newborn and my family lived on lasagna for a few weeks.
