The 1-pot, open a few packages, Chicken
a la Prevention magazine
pkge of chicken, any kind
pkge of small red potatoes (approx 2 1/2 lbs)
pkgs of cherry or grape tomatoes (pint)
pepper to taste
Jar of pesto or other sauce (I used a little lite Italian dresssing & fish-free Worcestershire sce, but you use what you have)
In a deep 9 by 13 disposable baking dish, you place your chicken. Add the baby potatoes, cherry tomatoes, and dump your sauce on top. Add the pepper.
Roast uncovered at 425 for 45 minutes.
