Homemade Pickled beets!
PICKLED BEETS
5 - 16 oz cans beets, drained (sliced are OK too)
2 cups sugar
1 1/2 cups white vinegar
1 cup water
3 sticks cinnamon
8 whole cloves
Combine all ingredients in a stock pot and bring to a boil. Allow to cool and transfer to a glass or plastic container.
Eat cold.

It is so strange that you posted this now!
I was just thinking I really want pickled beets and ALL the recipes I found wer so hard. You had to do like real canning.
How long does it last?

Can you use fresh beets? Splenda? And I hate cinnamon, so does it make a difference if I omit it?

When my husband makes it he only uses fresh beets. And forget about the cinnamon and I would only use splenda no sugar for me.
