Curried squash soup

If you are not a fan of curry, this soup will change your mind!! A must try!!

1 med. onion
3 cloves of garlic minced
2 carrots peeled and chopped
1 sweet popato peeled and chopped
4 cups of butternut squash peeled, seeded, and chopped
2 TBSP of parve margerine
1 tsp curry pwd.
1 tsp. cumin
4 cups of water
4 cubes or TBSP of bullion
1 tbsp of died cilantro or parsley
1/4 tsp tabasco sauce

In a soup pot melt margerine add onion garlic carrot potato(yam) and squash for 5 mins.
Stir in curry, cumin cook for addtional min.
add water and bullion, bring to a boil reduce heat and simmer for 25 mins or until all veggies are tender.
cool and add tabasco
puree until all smooth
