-Challah from store
-flounder fillets stuffed w/ frozen chopped spinach and onions (frozen chopped)
-bagged salad and pickles
-chicken soup from freezer OR split pea soup from one of those packages they sell (I don't add their spice pack bec. of MSG)
-stew - chicken and sliced veggies (sweet potato, carrots, zucchini ran through the slicing blade of the food processor)
-rice (instant brown - Uncle Ben's)
-Dessert from store/ fruit

You said homemade. If I'm lazy or its just me and DH, we'll often do takeout. But for homemade ...
[list]Challah from freezer or bought (I'll cheat on that one)
*No soup -- of we eat soup, we'll skip the meal
*Teriyaki chicken cutlets -- marinate in 4 T teriyaki sauce, 1 T olive oil, ginger, garlic, then bake at 350 for 25 minutes
*Roasted veggies -- just use frozen, add a spray of oilve oil and some garlic, and roast
*mashed potatoes
*Green salad
*Corn, black bean and fake shrimp salad for lunch
*Small pot of cholent ... maybe

Yeah, no one's writing anything homemade.
When I have horrible morning sickness and can't even think of food, this is what we usually have for Shabbos: (Honestly, I get so sick I can't even make it to the table, and the sight of food will make it all worse, but these are some things I've found I can handle. Don't forget I'm also too sick to stand in the kitchen to prepare food. If I get dressed on these days, it's a miracle.)
So here's our gourmet menu:
gefilte fish (stick in a pot of water and boil)
coleslaw from a bag (I need to dress it which is no fun for me at that point)
chatzilim (stick eggplant in broiler and then mash with some mayo, lemon juice, salt and garlic)
cucumber salad (a big job for me)
tomato-onion salad (also a big job for me)
corn salad (a big job too)
sliced vegetable or fruit platter for Shabbos day, made by husband
small soup just for Friday day for the kids, made by husband
baked chicken for the kids, made by husband
a kugel for the kids, made by husband
cholent for the kids for Shabbos day, made by husband
a simple cake, which is the only thing I have the mental and physical capacity to prepare because I'm usually craving it and it's usually brownies
It depends if it's winter or summer, because we'll need more food for the long Shabbos afternoons, but basically we can get by with that. Before the kids' time, we had a lot less. Fish, coleslaw, fresh fruits and vegetables are my lifesaver. And brownies, of course. The stench of everything else makes me miserable from Fri morning until the pots are all washed (not by me!)
Oh, and we have to buy challah, unfortunately, because it sends me running from the table too. I can eat homemade challah to no end when I have morning sickness, but can never make it.
I'll usually open a can of tuna, corn, and boil some eggs, because if I don't have instant food every hour on the dot, I get sick and have to take a nap until it passes.
We have had so many interesting Shabbosim....

I usually cook in bulk and freeze... so when it's "one of those weeks," I can pull out about half of Shabbos from the freezer.
My seudos are usually like this:
Friday Night
Challah - I bake enough for 2 months at a time
Fish
Soup - I make a month's worth at a time
Chicken
2 Starches (Potato Kugel, Barley Pilaf, Cabbage and Noodles, Yerushalmi Kugel, Cranberry Apple Kugel, Jeweled Rice...) - I always have 2-3 Kugels in the freezer
2 Vegetables (Cole Slaw, Cucumber Salad, Chinese Cabbage, Any other version of salad... Roasted Vegetables, Green Beans...)
Shabbos Day
Challah - ditto
Fish
Cholent
Kugel - ditto
Salad from Friday night
Deli Roll - once in a blue moon
Shalosh Seudos
Salads from Friday night
Anything else that's quick and easy to make...
Desserts -
I usually have some sort of cake/cookie, something ice-creamish, and some sort of fresh fruit.

It's a VERY goooey dip/condiment made with ground up fenugreek seeds, ginger roots, corriander leaves, seasoned with lemon juice, salt and hot pepper sauce.
Definitely an acquired taste...

quickest shabbos ... buy pastrami and make sandwiches - simply wrap in aluminum and heat in the oven right before shabbos - sometimes I make a potatoe salad to go with it from little red potatoes ...
more homemade but quick ... cut up potatoes put under chicken in one layer (use 2 disposeable 9 x 13 pans) spice with garlic powder, paprika, and black pepper ... bake for 1 1/2 hours or so ...

easy shabbos.
bake or boil gefilta fish
buy or make easy dips (chatzilim, chummous)
salad
baked chicken
easy oven rice (2 cups uncle bens rice, 4 cups water, add soy sauce, soup mix, oil, mix, bake for about 40 minutes)
stir fried green beans with almonds or mushrooms.
fresh fruit and ice cream
cholent for shabbos day.

Hey now I'm feeling good. I always got a complex reading those complicated Shabbos menus around here. Simple for me and it happens quite often is:
store bought challah
herring
store bought dips such as eggplant, chumus, tehina, jalapeno or olive
chicken soup, or creamed squash soup
cut up fresh vegetables or large salad
Roasted chicken with different dressing depending on the week
Brown rice or broiled potato's, or pasta
dessert is fresh watermelon and nosh
Shabbos day
herring and dips
egg salad
veg salad
chulent
watermelon and nosh
SS
store bought rolls
dips
large leafy salad
cream cheese
lox spread
vanilla yogurt ice cream
watermelon

with skin...because the whole idea is that the honey helps form a nice crust on the chicken which is even crispier with skin...
but perhaps it could work w/o

baked gefilteh log (I'm loving 1/2 can tomato soup mixed with 1tbsp paprika and 2tbsp sugar gives a delicious glaze)
smoked salmon (more for shabbos day or when I'm preg and craving the salt)
avocado
storebought dips x2 - either matbucha hummus tahina or chatzilim
veg salad
veg soup (if I'm preg and can't stand the chicken...)
chicken over rice - 2-3 cups of rice in a pan, top with sliced onion and chicken pieces sprinkled with paprika, garlic, salt & pepper (rub into skin for better taste) and then add water to cover the rice by 1/2-1 inch
dessert - either store bought cake or fruit
shabbos day add cholent, egg salad, cold cuts - pastrami, turkey etc.

My really easy Shabbos:
gefilte fish from the jar, or defrosted already cooked fish if I have any
chicken soup from the freezer
lukshen
whole roasted chicken
bought kugel, usually Yerushalmi
corn salad
embarrassing dessert made of half a package of red jello with a can of fruit cocktail stirred in
cholent
kishke from the freezer
egg salad, if I feel like making it, or else deviled eggs
cold roast chicken
corn salad
more embarrassing dessert, or else compote from the freezer
I don't usually post these menus on the Shabbos menu thread.

EVERY shabbos has to be easy during the school year!
Gefilte - season salt, olive oil, water - baked
bag salad, grape tomatoes,
kickin chicken from KBD short on time
baked rice and mushrooms (yes, w/ msg)
cake or muffins from a mix (the new whole wheat dunkan hines are great)
sliced turkey or cholent for day
