Pesach Salad Recipes

Does anyone have any good salad recipes to share? I'm having lots of Israeli guests and I really don't have experience cooking Israeli style (especially not for Pesach!)
Also, ingredients are not really a problem since I use just about anything that is Kosher L'Pesach (except kitniyos).

babaganush (no garlic though),
rattatouille (zucchinni, eggplant, tomatoes, peppers, onions, mushrooms, tomato sauce, sugar, salt)
cucumber salad (cucumbers, onions, sugar, lemon juice)
beet salad (beets, lemon juice, onions, salt, sugar)
Israeli salad (tomatoes, onions, peppers, carrots, cuccumbers, oil, lemon juice, salt)

Morrocan Carrot Salad

Fried Zucchini Salad

3 Pepper Salad

You can also experiment with salads made from various greens, nuts and fruits like oranges or kiwi or mango or strawberries, and a simple lemon and oil dressing.

Add salt and lemon juice

I make the exact salad that Tovah wrote during the year, except I use cilantro and LIME juice. Lime juice is awesome, it has that sourness, but a sweeter kick to it. (for the regular year, I put in cumin and cayenne pepper too, but you dont have to do that)

One salad we make a lot is chicken salad, we put in romaine lettuce, fresh oranges, red onion and avocado and shredded leftover chicken.
Season it with oil, sugar, salt, pepper, and a vinager of your choice (balsamic used SPARINGLY)

We also make rattatoule, eggplant, eggsalad, beet salad, vinagraitte (potatoes, beets and pickles with mayo) gaucamole, regular vegetable salad, carrot salad, fruit salad, etc.
I really do love pesach food.

Our egg salad is a bit different though. My mom fries half egg and onion in OIL, and boils eggs and then mashes all of that with regular onion and cooked potato. Its really really good, and the babies always seem to love it.

this isnt a salad but hte last post reminded me of this
my father mashes potato and mixesi n a raw egg and salt, wierd if u ask me but he likes it and it coats his stomach for all cups of wine espcially at moshiach seuda - last day when u drink one after hteo ther

I always make hearts of palm salad on Pesach (avocado, tomato, hearts of palm, garlic, lemon juice, dill, salt.)
Fresh garden vegetable salad (lettuce, tomatoes, kirbies, olive oil, lemon juice, garlic, salt.)
Shredded carrot salad (lemony dill salad or a mayo one.)
I can post recipes if you'd like.

Beet salad (boiled beets, lemon, sugar, salt, scallions)
Carrot salad (grated carrots, sugar, lemon)
Cucumber salad (sliced cukes, sugar, lemon, salt, dill, oil)
Babaganoush (roasted eggplant taken out of the peel and wisked, oil, mayo, salt, lemon, garlic, scallions)
tomato dip (Blended tomatoes, garlic, salt, maybe mayo)
